No Tricks here...just TREATS!

Ok, so Halloween isn't really my favorite holiday,
 but I had a lot of fun making these for some customers and I think they turned out super boo-licious!!
(Did I just say that??!! haha)

P.S....I just took my first dozen cupcakes to a local store/gas station.  One of those "Quick Stop" kinda stores that has lots of goodies to choose from!!! If all goes well, I hope to possibly REPLACE those pre-packaged muffins and cakes that have disgustingly longgg shelf lives! haha

Peanut Butter Perfection!

This recipe is beyond perfect! The creamy peanut butter frosting is divine! My daughter said that she "wished that her toothpaste tasted like this!"  I don't know if I would take it THAT far, but I DO know that these fudgy chocolate cupcakes, topped with fluffy peanut butter frosting, a drizzle of chocolate and crushed Reece's is literally a party in your mouth!!

This one was without the extra drizzle of chocolate per my husbands request!
 Ohhh...and who can forget the little surprise in the middle!
Yes...more peanut butter via a miniature Reece's cup!!
Seriously...you need a gallon of milk to wash this little puppy down!!

This is really what I was meant to do in life....

First big party was a great success!!! I worked hard to make a good first impression
(You only get one chance, right!!?!)

Homemade Candied Lemon Zest....

Round Two...

So, I decided to give the Pumpkin Spice Cupcakes another shot and this time, switched up the frosting to Brown Sugar Cream Cheese!!! That frosting was slap-yo-gramma good and I am excited to make these this coming weekend for a big party!! (But please...no slapping grandma!!!)

I decided to hand frost those little babys!!  I prefer the super clean "professional" piped look, but something about today told me to just whip and swirl it on those little cakes!!


I even got some of those handy plastic carriers that you see at the grocery store...but pleaseeee....these are SOOO much better than your local grocery stores interpretation of a cupcake....just sayin'

What a FEELING!!

My heart is melting!! 
 Today was my very FIRST cupcake delivery! I was sooo nervous and excited about this order that I couldn't sleep last night!  I spent all morning making sure everything was perfect and went on my happy litte way to the local elementary school!  I recieved word shortly after the delivery that the cupcakes were a raving success and that I would be gaining a ton of business from it!!  This made my heart drop in such an amazing way! I am, by nature, very self critical and even...UGH self doubting!  After today though, I have come to the conclusion that perfect STRANGERS have no reason to lie to me about the quality and taste of my cupcakes!! I feel confident moving forward and even though it is hard work (whew) I have new energy for what I am doing and I really can't wait to see what the future holds!!!

Pumpkin Spice and everything nice.

Rich, dense, moist pumpkin cake blended with the perfect amounts of spices paired with a cinnamon cream cheese frosting really brings you into the holiday spirit and makes this cupcake feel extra special!  
While the frosting tasted great, it came out pretty thin!! I dont know what, why or how it happened but I am making a second batch!! Needless to say, my daughter didnt mind whatsoever that the counter tops were covered in big blobs of excess goodness that slid off the (in her words) "pumpkin mountains"!

French Apple Cobbler!

This is by far my favorite "go to" recipe when I have a only small quantity of apples.
A quick and easy family favorite.
 Serve warm and top with a little heavy cream or a scoop of vanilla ice cream!
MMMmmmm smells so good! 
Things like this remind me of the up and coming holidays!
*Does this mean I can break out the Christmas music yet???!!!???*

Apple and Cherry Pie Pops!!

I love all things simple (well, thats not entirely true haha) so when I saw these fun little treats in the September issue of BHG Magazine, I thought I would call my favorite sister-in-law for a baking day.  Below are some pictures of our progress as well as the recipe/techniques we used!!

Step 1:
4 Granny Smith Apples!

The Cherry Pie filling was in a can!  How EASY is that??!!
(one can made about 20 pops)

Step 2:
Cut out your shapes!
 
We used store bought pie crust, rolled it out and used apple shaped cookie cutters for the Apple Pies and heart shaped cookie cutters for the Cherry Pie Pops. (HOW CUTE ARE WE!!)

Step 3:
Dice up your apples and put into a pot on the stove.  Add sugar, cinnamon, nutmeg, ground clove and some lemon juice!!

Let it come to a boil.
Next, mix a Tbsp of water with a Tbsp of Corn Starch and put into bubbling mixture.  Let it thicken for about 5 minutes and turn burner off.

Step 4:

Put stick onto cutout and place about a Tsp to a Tbsp of filling on pie crust.
(depending on the size of your cutouts)

Step 5:
Place a second cutout on top of the filling and make sure to seal all of the edges well!  Pay special attention around the stick.
Brush with egg wash and sprinkle cinnamon/sugar on top and place in the oven.

Step 6:

Finished Product!!!
They tasted even BETTER than they looked!!



Apple Pie Filling:

4 Granny Smith Apples (Makes about 20 pops)
1/2 Cup of Sugar
A few dashes of each, Cinnamon, Nutmeg and Ground Clove
1 Tbsp of Lemon Juice
1 Tbsp of Corn Starch
1 Tbsp of Water

Peel and dice up apples, put into pot on stove and add sugar, spices and lemon.  Bring to a boil.  Mix corn starch and water in small dish and add to boiling mixture.  Let the mixture thicken for about 5 minutes-then turn off stove.

Bake at 375 for approx 10 to 12 minutes.


We had a really fun time making these together and
its a great project for the kids to help out with too!
